Strawberries are lightly roasted and then set in a chamomile and lemon custardy clafouti filling. This tart is baked in a pate sucre crust featuring white whole wheat flour that was milled in house. For garnish we have a lemon sugar cookie crumb border and confectioner's sugar. Serves at least 8.
The white whole wheat berries are sourced regionally from Seneca Grain and Bean in NY state and milled at the bakery into fresh flour. Strawberries are locally sourced primarily from Cider Hill Farm in Amesbury and Marini Farm in Ipswich.
INGREDIENTS: Crust: House milled white whole wheat flour, unsalted butter, eggs, sugar, salt.
Filling: Half and half, milk, eggs, wheat flour, strawberries, chamomile tea, lemon zest, sugar, vanilla paste.
Topping: Wheat flour, butter, sugar, eggs, lemon zest, baking powder, salt. Snow sugar.
